Lemon Myrtle is without a doubt the most popular of Australia’s native herbs, with its fresh fragrance of creamy lemon and lime. It has had a long history in the Australian spirit industry, mainly as an unmistakeable addition to any good Australian gin’s botanicals list.

I wanted to really see just how much of the versatile and refreshing taste of lemon myrtle I could extract and infuse with my ultra-pure vodka so it could be used to inspire new cocktail creations and celebrate the amazing native Australian flora.
