Hand picked and partially de-stemmed has created well-balanced tannins that have added structure and longevity to this wine, allowing it to age so well. Cold soaking the grapes for 3 days has produced a full-bodied character offering a rich and deep purple hue. Undergoing wild fermentation and delaying malolactic fermentation has elevated the terroir, releasing a symphony of flavours that dance on your tastebuds. Eighteen months in old French oak has imparted a unique character to the final product.
